My family and I love the beach it’s become a summer tradition to make our way to Myrtle Beach every year.  They have a few of my favorite restaurants ever but, my absolute fav is a cute brunch spot that makes the most amazing crepes and waffles. We make it our business to visit this place every time we go.  One of my favorite dishes on the menu is a yummy waffle (which can also be made into a crepe) that is topped with grilled chicken, honey mustard, and cheese.  I’m so addicted to this item in both waffle and crepe form that I order 2 every time we go.  It’s the middle of winter and I began craving one of their waffles something serious and since I’m clearly not visiting the beach right now I decided to make my own rendition of their chicken and waffles with a few adjustments.  Not only was I able to duplicate this dish but I my adjustments made it better.  Don’t be intimidated by the ingredient list because this is a super easy brunch dish that will make you look like a chef in your household.  I love it because it’s kid friendly and the homemade honey mustard sauce is much better than any honey mustard I’ve ever had before.  I hope you enjoy this plate of yumminess as much as I enjoyed creating it.  Be sure to tag me on Instagram if you recreate it so that I can repost some of your recreations.

  1. Place your chicken pieces in a large bowl with your seasonings, hot sauce, and buttermilk.  Allow this mixture to marinate for at least 30 minutes to an hour. 
  2. In a medium bowl prep your honey mustard sauce.  Whisk together your mayo, mustard, honey, vinegar, and cracked pepper. Place in fridge until its time to dress your dish. 
  3. While your chicken is marinating prep your waffles and heat your oil in a large skillet over medium heat to fry your chicken (or use a deep fryer).  
  4. In a large bowl mix together flour, sugar, baking powder, salt, and herbs. Create a well in the middle of your bowl and add buttermilk, eggs, melted butter, and vanilla. Whisk all ingredients together until well combined. Stir in cheese.  Pre-heat your waffle iron. 
  5. Once oil is hot, toss your chicken pieces in flour and place in oil and cook until your chicken is golden brown, allow oil to drain by placing chicken on a wire rack (place paper towels under rack to catch oil). While your chicken is cooking, grab a measuring cup (1/2 cup) and pour batter into waffle iron and cook according to waffle iron directions.  Once chicken and waffles are done it's time to plate. Top chicken on top of your waffle, add tomatoes and scallions and top with honey mustard (add as much as you like) now ENJOY!
